Walnut Carrot Cake

I tried baking Walnut Carrot Cake yesterday. It didn't turn out very nice although I had a lot of compliments about it. I found the carrots too juicy (which made the cake too moist.. i prefer a drier sort of carrot cake) and the icing too sweet and buttery. I scrapped off the top layer of icing so that accounts for the blotchy looking job below. Perhaps I've grown accustomed to the Cedele one, with thick cheese flavoured frosting and not too moist, that I disliked what I did yesterday.

I REALLY feel like baking Red Velvet cake, but that would mean that I've to get coca powder. and me being kiam siap.... HEH.
